Lighter Fare Breakfast

So after yesterdays big meal, I decided to have a Lighter Fare Breakfast! As many of you know already, I have been trying to eat "Healthier" BUT Pork Belly does not count...its PORK BELLY!

This mornings breakfast included fresh Cantaloupe and Grapefruit.  To top it all off!...the last of the HomeCured Pork Belly.  Once again, I cut off a Large piece of it and seared it off and rendered out the fat that resulted in a Nice and Crispy and OH SOOOO GOOD skin.

 
The Saltiness of the Pork Belly enhanced the sweetness of the Fruit!
